PUMPHERSTON originated because of the nearby shale mines and now rubs shoulders with the New Town of Livingston. It is, effectively, one of the dormitory towns for Edinburgh. Pumpherston is also off the beaten track for most people as it is in the shadow of a massive factory and industrial units and would not be a place many would gravitate to for good food. Well, think again. The Bay Leaf may not be sumptuously furnished, nor have all the trappings of more expensive Indian restaurants in the city, but the food is good. We popped in en route from Glasgow and the Bay Leaf is easy to find, with plenty parking and the welcome was friendly. There is also plenty of space between tables. So, what did we have? The Chicken Achari, cooked with home-made pickle and spices produced a memorable dish of mouth-watering tangy flavours. My Bhindi Ghost was even better, in my view. Succulent pieces of sweet lamb cooked with fresh okra giving it a distinctive flavour and garnished with a touch of ginger, garlic and fresh coriander. The recommendation was pilau rice, and it worked, but Pam’s garlic nan was wonderful, strong flavoured with just the right texture. The garlic nan, was, for me, even better with the dish. In all, the Bay Leaf worked for us.
